Pork Sinigang - al fresco in Scotland!

    IMG_20170622_211106685-600x800.jpg IMG_20170622_211226053-600x800.jpg Kris was craving pork sinigang so we decided to head into the hills with a my camping stove and ingredients (including a pack of Knorr Sinigang mix - 1 of 8 brought over by Kris from the Fils!)

    We went to The Meldon's - a few miles north east of Peebles (Scottish Borders). Fortunately no midges - I had warned Kris about the little biting blighters!

    We had all the ingredients for Kris's recipe - pork belly, cubed pork, stock, okra, green beans (no string beans but v similar), onions, chilli's, spinach and tomatoes. Neither Asda, Sainsbury's or Tesco had fresh horseradish so we added some paste.

    First time I'd tried this sour soup - I was impressed! Made a large pot so some will be going into the freezer.

    We were a bit late in starting to prepare the dish - almost 8pm. Kris continues to be surprised at how light it is up here in Scotland at this time of year - we left the site at 9.30 and it was still light - just avoiding a rain shower.

    All in all a fun, gastronomic, evening!

    That look really nice. Never tried it yet. You picked a great place to have pick nick. I love the borders and miss the natural landscape and beauty. Living down south now is just flat and everywhere pretty much the same.

    Hi Stu - I can certainly recommend but I know that the sourness (derived from the tamarind fruit) is not to everyone's taste.

    I agree we're v lucky here in Alba - although remote with hills all around us - filled with sheep - we could have driven into Edinburgh in around 40 mins.

    That said, there a lots of beautiful spots in England - with the Dales, Fens and Cotswold's being 3 of my fave.

    My wife cooks sinigang often. Either pork..chicken.. prawns..salmon.

    She can get Knorr sinigang sachets in a Filipino shop here on the isle of Wight.

    It's worth a try. We never know till we try it. I have such a liking of Filipino foods. Always so much flavour.
    The fens is closest to me living in Bedfordshire. I originate from the "honest toon" but don't get back very often. When my partner gets here she wants to visit Edinburgh having seen pics of the place and to see the beauty of the highlands as she loves nature.

    Thank you sir! I see a seller on Amazon UK has them - around £3 for a couple of packs.

    I also noted that Tesco used to stock but no more.

    Hopefully our reserve stash will keep us going for a bit!

    Haha yeah don't want Hadrians wall getting built back up again:D.
    She wants to experience the snow so there will definitely be a trip to the highlands for that one day. ;)

    The proper condiment for sinigang is Patis (fish sauce) and Calamansi with or without chili.. I wont eat the stuff without it...
    That would be like fish n chips without salt n vinegar IMO.

    Yes Boots - we didn't have any fish sauce - in fact I've personally never used it in cooking - but it's on the next shopping trip!

    This is so cool :D I pictured doing this kind of thing with my partner... just not with a big pot of sinigang! :lol: And yes, patis and calamansi! Definitely try it with chili - red bird's eye chili specifically.

    That`s good your willing to try it..
    Fish sauce on its own has a very strong almost off putting stench but when you add the right amount of lime juice to it, something magical happens!
    It`s actually served as a cold dip in a bowl with chopped raw onions..

    Aside from pork sinigang this is also my absolute favourite! I made my partner try this and he spat it out! Fun times :lol:

    Labuyo grows everywhere here (wild) as you well know and we use them a lot.
    I also grow a lot of other chili varieties here...
    Some from last years crop... Hot little buggers!

    Yeah..They have some very strange tastes... Why for instance, do they dip freshly sliced Pineapple in salt?

    We live in Bohol which is basically lime stone rock Island!
    Not easy to grow many things here because of that but we still grow stuff like Tomatoes,Pumpkins,Papaya,coconuts,mangoes etc..


    Also..The bugs don`t help.
    Shook a tree once and this lot fell out!

    I even grew bananas in a pot last year.. The fruit this plant produced were amazing.
