are you going from Italy straight to Spain, and by land it's ok!
if you have returned back yo the UK you need a visa for Spain.

As I understand the Schengen visa must be obtained for the country you land in but once landed you can travel As long as you don't pass through immigration.
For example you could land in France and pretty much do all of mainland Europe and return through France

Expiry date is November 2019. It’s Type C visa and number of entry says MULT. Not sure if I can still use to going to Menorca Spain this September.

We had a Netherlands supplied Schengen (multiple entry) a few years back. Once we had our Dutch visit we made numerous separate European holidays entering directly to other Schengen countries without problem. I'd say it should be fine. If you contact the relevant embassy or vfs for information, they are quite useless as each of them tell you to contact the other.
