Well. In a way you would go about compiling the information first. As it is big job. Then go through the online application process. You do not have to be there but the applicant does. There is no priority visa service. Just a priority service at the point of submission at VFS. The latter will neither speed up the actual visa application process nor give you any advantage as it simply allows you pick a submission date of your choosing.
Gather all documents e.g. evidences first before submitting the application on the web. Make sure to double check everything prior to hit submit. Good luck!
