Question about getting married on Malta

Our situation has changed and its looking more likely we will do the SS route through Malta now. We also want to get married in Malta.
Its pretty straight forward actually as they do not require any residency in Malta before the marriage. I have spoken to the Maltese registrar and they inform me that we only need to be in Malta 2 days before the wedding date, to just show original documents to verify emailed copies.
    My question is:
Can my fiancee apply for a travel Schengen visa and fly into Malta on a lets say "holiday" we could book 2 one way tickets to give her a return leg so that it looks legitimate. We possibly may get some money back on the return flight. Once married in Malta, change the visa type to be spouse traveling with EU citizen (free visa) so she can look for work and apply for the Malta Residence card.
    Would this work?
I know you can get married in Malta and for non EU residents but this would be on a visa that does not cover moving to Malta. Our idea is go there, get married and then settle.
Could I have your thoughts on this please.

Yes, sounds like Markham will be the expert on this.

He's going down a similar route at the moment, is he not ?
