You and your wife are in the UK and are both residents of the UK. You have your UK passport and she has her UK residency which states that she is a family member of an UE/EEA National. I would think that in those circumstances you do not need a visa but if you are worried then go ahead and get a visa to be safe. There is no such thing as a Spanish visa, all visas for countries in Europe are Schengen visas.
If she does not hold a UK residence card which specifically states that she is the family member of an EU citizen, she will need to get a Schengen visa. It should look something like this:
