Tasty Fruit Salsa's

    Pineapple, Pepper & Chilli Salsa

    Ingredients:-

    1/2 Cucumber - (sliced lengthwise, deseeded and finely diced)
    1/2 Green pepper - (deseeded and pith removed then finely diced)
    1 Spring Onion - (sliced)
    1 large Chilli to own taste (deseed and finely dice)
    1/4 of a ripe, sweet Pineapple (de-cored and eyes removed - cut into bit sized chunks - keep the juice to add to the mixture)
    2 tsp Fish Sauce
    Zest and Juice of 1 lime
    2 tsp Sugar
    1 tbsp chopped mint
    Sea salt and freshly ground black pepper

    Method:-

    Mix all ingredients together and season to taste with salt & pepper
    Chill before serving



    Mango, Papaya & Passion Fruit Salsa

    Ingredients:-
    1 ripe Mango - (peeled and finely diced)
    1 ripe Papaya - (peeled and finely diced)
    2 Passion Fruits - (cut into halvesthen scoop the flesh,juice and pips into a bowl)
    Juice of 1/2 lime
    2 Spring Onions - (finely chopped)
    1 tbsp finely chopped fresh coriander
    1 tbsp finely chopped fresh mint
    Sea salt and freshly ground black pepper


    Method:-
    Mix all the ingredients together in a bowl.
    Season to taste

    Chill and serve (within 1 hour max for best taste and texture)





    Mango, Lime, Red Onion & Mint Salsa

    Ingredients:-

    1 large ripe Mango
    1/2 large red onion - (finely diced)
    2 tbsn chopped mint
    1 large red chilli (finely diced)
    2 tsp sugar
    1 tsp mint jelly
    1 tbsp Olive Oil
    Juice of 1 Lime
    Sea salt and freshly ground black pepper

    Method:-

    Mix all ingredients together and season to taste
    Chill & Serve
